  • Pumpkin is a very rich source of vitamin A and the powerful phytonutrient beta-carotene. It is a good source of vitamin A, with some vitamin C and iron.
  • The high amount of fiber present in pumpkin is thought to be good for bowel health.
  • This cool, great-tasting smoothie may be helpful if suffering from a sore mouth or throat during chemotherapy or radiation therapy treatments.
  • If you need to increase your daily calorie intake, this might be a great snack using half and half and ice cream instead of the fat-free versions.
  • Adjust for sweetness using less or more maple syrup.
