Traditional Cole Slaw and Potato Salads

Makes cole slaw serves 8–10; potato salad serves 6–8Posted May 31, 2013

This season, when in the mood for traditional cole slaw and potato salad to accompany your favorite barbecues, try these foolproof standbys.

Directions

  1. Traditional Cole Slaw: Shred the cabbage and carrots. Mix together with the minced onion.
  2. Mix the buttermilk, milk, mayonnaise, vinegar, lemon juice, sugar, salt and pepper until smooth.
  3. Add the cabbage, carrot and onion mixture. Toss well, cover and refrigerate.
  4. Traditional Potato Salad: Boil the potatoes in their skins until soft. Set aside to cool, then peel and cut into cubes.
  5. Mix the mayonnaise, mustard, salt and pepper until smooth.
  6. Add the cubed potatoes, chopped onion, egg and celery; gently toss and serve.

  • Green cabbage is a good source of vitamin C and fiber.
  • Green, red and Savoy varieties of cabbage contain glucosinolates.
  • Cabbage is a cruciferous (cross-bearing, due to the shape of its flowers) vegetable of the family Brassicaceae. Other vegetables in this family include bok choy, cauliflower, broccoli, kale and collard greens.
