Roasted Delicata Squash

I was just at my local farm market and saw a variety of beautiful-looking squash. Delicata squash is sometimes referred to as sweet potato squash, peanut squash or Bohemian squash. It has a beautiful oblong shape, yellow skin with longitudinal dark green stripes and an orange-yellow flesh. Although it is considered a winter variety, delicata belongs to the same species as zucchini and yellow squash. It has a skin which is edible like summer squash, although it is a bit thicker, and it tastes amazing roasted. It has a taste similar to that of sweet potato. I am roasting these today as an after-school snack for my children.

Directions

  1. Preheat oven to 375°F (190°C).
  2. Cut squash in half and remove the seeds.
  3. Cut into 1–2-inch chunks.
  4. Coat all sides well in olive oil; add salt and pepper to taste.
  5. Roast for 20 minutes, turning occasionally, until golden brown.
  6. Serve hot or at room temperature.

  • Delicata is a good source of vitamin A.
  • One gets the benefits of added fiber when eating the delicious, roasted, caramelized-tasting skin.
  • It is low in calories: 30 calories in 3/4 cup.
  • It also has benefits if one is experiencing symptoms of constipation.
