Parmesan Nut Ring / Bacon Nut Ring

This recipe has many fans. I have served it with scrambled eggs for breakfast, with a green salad for lunch, or with tea at tea time. It can be prepared either for the herbivore or the carnivore palate. Last week, my daughter's friends gave this recipe two thumbs up.

Directions

  1. Preheat oven to 350°F (175°C). Grease a ring mold.
  2. Sauté the onion, garlic, celery (and bacon, if using) in the oil until soft.
  3. Add the tomato juice and flour and stir until the mixture thickens.
  4. Add the remaining ingredients (including the Parmesan, if making the Parmesan version).
  5. Add salt and pepper to taste and mix thoroughly.
  6. Press the mixture into the greased ring mold.
  7. Cover and bake for one hour.
  8. Unmold and garnish with watercress. Serve warm with scrambled eggs for breakfast, or at room temperature with a salad for lunch.

  • The ingredients with the most pronounced health benefits include the walnuts or hazelnuts, onion, garlic, oats and parsley.
