Mixed Greens and Tomato Salad with Toasted Seeds

Directions

  1. Dressing: Blend the Dijon mustard, balsamic vinegar, olive oil and salt together, then add a bit of water to attain the desired consistency. Add Tabasco if desired.
  2. Toss the greens, tomatoes and seeds together and add dressing to taste.
  3. Plate individually and serve.

M.D. Notes

  • Sunflower seeds contain folate and selenium. They are also an excellent source of the antioxidant vitamin E, which protects cells from free radical damage.
  • Pumpkin seeds contain iron and zinc. Iron plays an important role in the production of blood cells.
  • Sesame seeds are a good source of the mineral calcium.
  • This salad is particularly good eaten with spinach pie.
