Flan

Flan, or crème caramel, is a type of custard in which sugar is caramelized, poured into a baking dish and allowed to harden, followed by pouring in a custard base and baking in a water bath.

Directions

  1. Preheat oven to 350°F (175°C).
  2. Caramelize 1/2 cup sugar and pour into the baking dish.
  3. Beat the 6 eggs with 1/3 cup sugar.
  4. Heat the milk with the cinnamon stick to just below the boiling point. Remove the cinnamon stick.
  5. Add the milk and vanilla to the egg mixture, mixing at low speed.
  6. Pour the mixture into the baking dish.
  7. Place the baking dish in a water bath (1–2 inches of water).
  8. Bake for one hour.
  9. Cut into pieces, spooning the caramel sauce over each serving.

  • For additional calories, use heavy cream or half and half instead of milk.
