After years of preparing many varieties of scones, this recipe has evolved, which we coined the "perfect scone" without butter.
Directions
- Preheat oven to 425°F (220°C).
- By hand, combine flour, sugar, baking powder and salt.
- Add cranberries (or another chosen option).
- Beat the eggs.
- Stir in the cream and eggs until a dough is formed, without overworking the dough.
- Roll out the dough 1 inch thick and cut into triangles or circles.
- Place on parchment paper or an ungreased baking sheet.
- Brush the tops with milk and sprinkle with demerara sugar.
- Bake in the upper third of the oven until the tops are light golden and the bottoms golden brown, about 10–15 minutes.
